Spicy Panko Chickpea Patties

1 cup dry chickpeas (garbanzo beans) 1/3 cup fresh chopped flat-leaf parsley 2 eggs 1 ½ teaspoon cumin ¾ teaspoon salt ½ teaspoon cayenne pepper ½ teaspoon garlic powder 1 cup panko breadcrumbs, divided Vegetable oil for frying (I prefer grapeseed or canola)
How to do
1. Place dry chickpeas in a bowl and cover them with 2 quarts of cold water. Cover bowl with a kitchen towel and let them soak overnight. Drain water from beans and pat dry with a towel.
2. Fit your food processor with a metal blade attachment. Place beans, chopped parsley, eggs, cumin, salt, cayenne pepper and garlic powder into the food processor. Pulse the ingredients together until a rough, coarse meal forms. Scrape the sides of the processor periodically and push the mixture down the sides. Do not over-process or create a paste; you want it similar to the texture of couscous.
3. Once the mixture reaches the desired consistency, pour it out into a bowl and use a fork to stir; this will make the texture more even throughout. Use the fork to incorporate ½ cup of the panko bread crumbs into the mixture (reserve the other ½ cup). Cover the bowl and refrigerate for 30 minutes.
4. Fill a skillet with vegetable oil to a depth of 1 ½ inches. I prefer to use cooking oil with a high smoke point, like grapeseed. Heat the oil slowly over medium heat.
5. While oil is heating, pour the other ½ cup of panko bread crumbs onto a plate. Form chickpea mixture into flat slider-shaped patties using wet hands. Use about 3 tbsp of mixture per patty. Coat each patty on both sides with dry panko breadcrumbs.
6. Before frying my first batch of patties, I like to fry a test the oil temperature by frying one in the center of the pan. If the oil is at the right temperature, it will take about 3 minutes per side to brown (about 6 minutes total). If it browns faster than that, your oil is too hot and your patties will not be fully cooked in the center. Cool the oil down slightly and try again. When the oil is at the right temperature, fry the patties in batches of 6 till golden brown on both sides. Once the patties are fried, remove them from the oil using a slotted spoon. Let them drain on paper towels.
7. Serve the patties fresh and hot; they go best with creamy tahini sauce. Enjoy!

As I mentioned above, these are going to need a little more oomph than the original recipe entails. I’d vote for some orange or lemon zest, perhaps some cinnamon or vanilla extract or … well, what do you think? I am eager to see what you all do to step it up a bit.

2 eggs, well beaten 1 1/2 cups of milk or yogurt (I used milk and am only assuming that the yogurt will work as well) 2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1/4 cup sugar 3 medium apples, peeled and coarsely grated (I used yellow delicious, but will use a more tart variety next time) Extra flavorings (see recipe notes) Vegetable oil, for frying Confectioner’s sugar, for dusting
1. Mix the eggs with the milk or yogurt in a large bowl.
2. In a smaller bowl, whisk the flour, baking powder, salt and sugar together.
3. Combine the wet and the dry ingredients and stir in the apples and whatever other flavorings you see fit.
4. Heat a thin layer of oil in a skillet over low to medium heat. Drop large spoonful of batter into the pan and flatten it out a little (otherwise, you might have trouble getting them to cook in the center) and cook until golden brown underneath. Flip the pancakes and cook them for an additional two or three minutes.
5. Either dust with powdered sugar and serve immediately, or keep on a tray in a warmed oven until you are ready to serve them.

Vegetarian Chickpea Burgers
- One 15-ounce can chickpeas, rinsed and drained
- One 4-ounce can diced green chiles
- 2/3 cup packed flat-leaf parsley leaves
- 2/3 cup bread crumbs
- Salt and pepper
- 1 large egg, lightly beaten
- 2 tablespoons vegetable oil
- 4 thin slices cheddar cheese
- 4 hamburger buns
- Dijon mustard, ketchup or mayonnaise, for serving
Spice it up Add a few dashes of ground cumin, curry powder or cayenne pepper to the chickpea mixture.
DIRECTIONS:

In a food processor, pulse the chickpeas, green chiles and parsley until finely chopped. Transfer the mixture to a medium bowl and stir in the bread crumbs and salt and pepper to taste. Stir in the egg and form the mixture into 4 patties, each about 2/3 inch thick.

In a large skillet or grill pan, heat the oil over medium-low heat. Cook the burgers for 4 minutes, then flip and cook for 3 minutes more. Top the patties with the cheese slices for the last minute of cooking. Serve the cheeseburgers on the hamburger buns with mustard, ketchup or mayonnaise.

- 1 medium ripe banana, cut in half lengthwise
- 2 tsp honey or agave
